Ingredients
  

Salad
  • 2 cups cooked chicken shredded
  • 3 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots julienned
  • 1 red bell pepper sliced
  • 1 cup cucumber sliced
  • 3 green onions sliced
  • ¼ cup cilantro chopped
  • ¼ cup toasted almonds
  • 2 tbsp toasted sesame seeds
  • Crispy wonton strips optional
Sesame Dressing
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 2 garlic cloves minced
  • ½ tsp black pepper
  • ½ tsp red pepper flakes optional

Method
 

  1. Prepare and chop all the vegetables.
  2. Whisk together all the dressing ingredients until smooth.
  3. Combine the vegetables and chicken in a large bowl.
  4. Pour the dressing over the salad and toss gently.
  5. Top with toasted almonds, sesame seeds, and crispy wonton strips.
  6. Serve immediately and enjoy.
