Ingredients
  

Salad:
  • 2 heads romaine lettuce chopped
  • ½ cup grated Parmesan cheese
  • 1 –2 cups croutons
  • Fresh black pepper
Dressing:
  • 1 egg yolk
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced
  • ½ teaspoon anchovy paste
  • ½ cup olive oil
  • ¼ cup grated Parmesan
  • Salt and pepper to taste

Method
 

  1. Wash, dry, and chop romaine lettuce.
  2. Whisk egg yolk, lemon juice, mustard, garlic, and anchovy paste.
  3. Slowly drizzle in olive oil while whisking until thick.
  4. Stir in Parmesan and season.
  5. Toss lettuce with dressing.
  6. Add croutons and Parmesan.
  7. Serve immediately.

Notes

  • Use pasteurized eggs if preferred.
  • Add grilled chicken for a complete meal.
  • Fresh Parmesan makes a huge flavor difference.
