Ingredients
  

  • 2 large cucumbers sliced
  • 2 cups ripe tomatoes chopped
  • ¼ red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley or basil optional

Method
 

  1. Slice cucumbers and chop tomatoes into bite-sized pieces.
  2. Thinly slice red onion.
  3. In a small bowl, whisk olive oil, vinegar (or lemon juice), salt, and pepper.
  4. Combine vegetables in a large bowl.
  5. Pour dressing over vegetables and toss gently.
  6. Add fresh herbs if using.
  7. Serve immediately or chill for 20–30 minutes before serving.

Notes

  • Salt cucumbers and pat dry to prevent excess moisture.
  • Add feta, olives, or avocado for variation.
