Ingredients
  

Burritos
  • 8 large flour tortillas
  • 8 eggs
  • ¼ cup milk
  • 1 tbsp butter
  • 1 lb breakfast sausage cooked
  • 2 cups cooked hash browns
  • cups shredded cheddar cheese
  • ½ cup Monterey Jack cheese
  • 1 diced red bell pepper
  • ½ cup diced onion
  • 2 sliced green onions
  • Salt and black pepper

Method
 

  1. Cook the sausage until browned.
  2. Cook the hash browns until crispy.
  3. Sauté the onion and bell pepper.
  4. Scramble the eggs until just set.
  5. Warm the tortillas.
  6. Fill each tortilla with eggs, sausage, potatoes, vegetables, and cheese.
  7. Roll tightly into burritos.
  8. Serve immediately or wrap individually and freeze.
