One-Pot Creamy Tuscan Chicken Pasta

Creamy one-pot Tuscan chicken pasta made with tender chicken, sun-dried tomatoes, spinach, and Parmesan cheese. A rich, comforting weeknight dinner ready in about 30 minutes with minimal cleanup.

Ingredients
  

  • 2 boneless skinless chicken breasts (cubed)
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup sun-dried tomatoes chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or rotini pasta
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Optional red pepper flakes

Method
 

  1. Cook seasoned chicken in olive oil until golden and done. Remove and set aside.
  2. Sauté garlic in the same pan.
  3. Add broth, cream, pasta, and sun-dried tomatoes. Simmer 10–12 minutes.
  4. Return chicken and add spinach. Cook until wilted.
  5. Stir in Parmesan until creamy. Adjust seasoning and serve.

Notes

  • Stir occasionally to prevent sticking.
  • Add milk if sauce becomes too thick.
  • Best enjoyed fresh but keeps 3 days refrigerated.
